Holy Crap Cookies

You can buy our house-made Holy Crap cookies at the Godiva café – they’re a best seller and great for a healthy treat on the go. But if you’d like to make them yourself we have everything you need to get going in store. 

This recipe was created by our Nutritionist when she was looking for an alternative to oat-based granola bars. It uses the popular Holy Crap cereal which is gluten-free, packed full of Omega 3 and (you guessed it) fibre – hence the cheeky name! This also adds a decent dose of protein (especially when combined with the eggs and almond flour.) Adding protein and fibre to a cookie helps to provide a steadier energy release. Instead of regular sugar, we use Sucanat (unrefined crystalized cane juice) although you could use brown sugar or coconut palm sugar if you prefer. 

Holy Crap cereal is also amazing with yogurt or added to oatmeal. You can find it in the gluten-free section opposite our hot deli. Whichever way you use it, enjoy!

MAKES 12 for breakfast or 20 snack size

INGREDIENTS

½ cup extra virgin coconut oil

2 eggs

1 tsp vanilla extract

¾ cup Sucanat (in the baking section)
(if you can’t find this - other alternatives can be coconut palm sugar or brown sugar)

2 cups almond flour

1 cup brown rice flour

1 tsp cinnamon

½ tsp baking soda

5 TBS Holy Crap® cereal

1 cup raisins or dried blueberries

METHOD:

Preheat the oven to 350F. Lightly grease a large baking sheet.

Whisk together the first three ingredients (wet) in a small bowl.

Stir together the rest of the ingredients (dry) in a large bowl. Blend well.

Add the wet ingredients to the dry ingredients and stir. When you can’t stir any longer, roll your sleeves up and kneed the ingredients together into a moist dough.

Roll the mixture into large balls (the mix should make about 14) and flatten in your palm. Place on the cookie sheet with at least an inch between cookies.

Bake in the oven for 12-14 minutes, until lightly golden.

Cool and store in the fridge.
